Ingredients
  

Chicken and Pineapple

Instructions
 

Preparation

  • Rinse the rice under cold running water until the water runs clear to remove excess starch.
  • Slice the pineapple into rings or chunks, setting them aside.
  • Season the chicken breasts with salt and pepper as desired.
  • Gather all your ingredients to streamline the cooking process.

Cook/Assemble

  • In a medium saucepan, add the soaked rice and pour in coconut milk along with an additional half cup of water. Bring to a boil.
  • Reduce the heat to low, cover, and let the rice simmer for about 15-20 minutes, or until all the liquid has been absorbed and the rice is tender.
  • While the rice cooks, heat olive oil in a large skillet over medium-high heat. Add the seasoned chicken and cook for 5-7 minutes on each side until golden brown and cooked through.
  • Add the pineapple pieces around the chicken in the skillet, cooking for an additional 2-3 minutes until they are warmed through and caramelized.

Serve

  • Fluff the cooked coconut rice with a fork and plate a generous scoop on each plate.
  • Slice the chicken and layer it over the rice, then arrange the caramelized pineapple on the side.
  • Sprinkle with optional fresh herbs before diving in.

Notes

Marinate your chicken ahead of time for extra flavor, and store leftovers in an airtight container for up to 3 days. Freezing portions is possible for up to 3 months.
