Preparation

  • Preheat the oven to 425°F (220°C).
  • Prepare a large baking sheet by lining it with parchment paper.
  • In a large bowl, combine olive oil, soy sauce, honey, garlic, and ginger. Mix well.
  • Add the chicken thighs and pineapple chunks to the bowl, ensuring they are well coated.
  • Slice the bell peppers and red onion, then add them to the bowl. Toss until everything is evenly coated.

Cooking

  • Spread the chicken and vegetable mixture evenly on the prepared baking sheet.
  • Bake in the preheated oven for 25-30 minutes, or until the chicken is thoroughly cooked and reaches an internal temperature of 165°F (74°C).
  • Check for doneness; the chicken should be golden brown, and the vegetables should be tender.

Serving

  • Remove the sheet pan from the oven and let it sit for a few minutes.
  • Using tongs, transfer the chicken and vegetables to serving plates.
  • Drizzle any leftover sauce from the pan over the top for extra flavor.
