Instructions
 

Preparation

  • Bring a large pot of salted water to a boil and cook the egg noodles according to package directions until al dente, then drain and set aside.
  • In a large skillet over medium heat, cook ground beef, diced onion, and garlic until the beef is browned and the onion is softened. Drain excess fat.
  • Stir in Italian seasoning, salt, pepper, and drained diced tomatoes. Cook for a few minutes, then remove from heat.
  • In a mixing bowl, whisk together cream of mushroom soup and sour cream until smooth.

Assembly and Baking

  • Preheat oven to 350°F (175°C). Grease a 9x13-inch baking dish.
  • Layer half of the cooked noodles, half of the beef mixture, half of the creamy sauce, and 3/4 cup of cheddar cheese in the prepared dish.
  • Repeat the layers, then sprinkle Parmesan cheese over the top.
  • Cover with foil and bake for 20 minutes. Remove foil and bake another 10-15 minutes, until the cheese is melted and bubbly.
  • Let the casserole rest for a few minutes before serving. Garnish with fresh parsley if desired.

Notes

This casserole can be prepared ahead of time and stored for perfect meal prep. For added flavor, consider browning the beef with some diced bell peppers. Use whole wheat noodles for a healthier option.
