Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C).
  • Peel and cut potatoes into 1 ½-inch chunks.
  • Rinse the potatoes in cold water and drain.
  • Dice the onion and finely chop the garlic and mushrooms.

Cooking Assembly

  • In a large pot, cover the potatoes with salted water and bring to a boil. Cook until tender, about 15–20 minutes.
  • While the potatoes cook, heat the oil in a large skillet over medium heat. Sauté the onion and garlic until translucent, about 4 minutes.
  • Add ground turkey and cook through for about 5–7 minutes. Incorporate chopped mushrooms.
  • Stir in paprika, thyme, and sage, followed by chicken broth, ketchup, and Worcestershire sauce. Let simmer for 5 minutes until thickened.
  • Add corn, peas, and carrots, stirring to combine.
  • Drain potatoes, then mash with milk, butter, and remaining salt. Stir until creamy.

Serving

  • Spread the turkey mixture into a baking dish.
  • Top with creamy mashed potatoes, smoothing with a spatula.
  • Sprinkle with additional paprika for garnish.
  • Bake in the preheated oven for 25–30 minutes or until golden brown on top.
  • Remove from the oven and let rest for 5 minutes before serving.

Notes

Consider using a potato ricer for super fluffy mashed potatoes. For added nutrition, sneak in some finely chopped spinach or kale in the filling. Store in individual portions for meal prep.
