Preparation

  • Gather all ingredients and measure out egg noodles, ground beef, onion, garlic, mushrooms, sour cream, beef broth, salt, pepper, and olive oil.
  • Chop the onion, mince the garlic, and slice the mushrooms.

Cooking

  • Cook the egg noodles according to package instructions; set aside once al dente.
  • In a large skillet, heat olive oil over medium heat, then add chopped onion and cook until translucent, about 3-4 minutes.
  • Stir in minced garlic and sliced mushrooms, cooking until mushrooms soften, about 5 minutes.
  • Add ground beef, season with salt and pepper, and cook until browned.
  • Pour in beef broth and bring to a simmer. Reduce heat and stir in sour cream, allowing to meld together.
  • Combine the cooked egg noodles with the beef mixture and stir until coated.

Serving

  • Serve the stroganoff in bowls and garnish with fresh parsley. Enjoy with crusty bread or salad.

Notes

Use lean ground beef or ground turkey for a lighter option. Store leftovers in an airtight container in the fridge for up to 3 days.
