Ingredients
  

For the Stir Fry

  • 1 tablespoon Cooking spray Prevents sticking while cooking.
  • 1 teaspoon Toasted sesame oil Adds rich, nutty flavor.
  • 2 cups Fresh green beans Adds a fresh crunch.
  • 1 cup Red bell pepper, sliced Brings sweetness and color.
  • 1 medium Yellow onion, sliced Adds sweetness and flavor depth.
  • 1 pound Lean ground beef The hearty main ingredient.
  • 2 cloves Garlic, minced Builds a fragrant base.
  • 1 tablespoon Fresh ginger, minced Infuses warmth and spice.
  • 1/4 cup Coconut aminos A soy sauce alternative that’s slightly sweeter.
  • 1 tablespoon Honey or maple syrup Adds a touch of sweetness.
  • 1 tablespoon Chili garlic sauce Adds heat and bold flavor.
  • 2 cups Rice for serving A filling base to soak up flavors.
  • 2 tablespoons Sesame seeds Optional garnish for texture and flavor.

Instructions
 

Preparation

  • Gather all your ingredients. Wash and trim the green beans, slice the bell pepper and onion, and mince the garlic and ginger.
  • Measure out the coconut aminos, honey or maple syrup, and chili garlic sauce. This makes cooking easier and quicker!
  • Prepare your rice according to package instructions so it’s ready to serve when the stir fry is done.

Cooking

  • Heat a large skillet or wok over medium-high heat and apply cooking spray.
  • Add 1 teaspoon of toasted sesame oil, then toss in the green beans and stir-fry for about 2 minutes.
  • Add the sliced red bell pepper and onion, and cook for another 3 minutes until they’re tender yet still vibrant.
  • Push the veggies to one side of the pan and add the ground beef. Cook until browned, breaking it apart as it cooks (about 5-7 minutes).
  • Stir in the minced garlic and ginger, cooking for an additional minute until fragrant.
  • Combine the coconut aminos, honey or syrup, and chili garlic sauce in the pan, mixing everything well. Cook for another 2 minutes.

Serving

  • Fluff your cooked rice and serve a generous portion on each plate.
  • Spoon the stir fry mixture on top of the rice.
  • If using, sprinkle sesame seeds for an extra layer of flavor.

Notes

Store leftovers in airtight containers in the fridge for up to 3 days. You can freeze the stir fry for up to 2 months, though some veggies may lose their crunch.
