Preparation

  • Gather all your ingredients. Ensure your ground beef is thawed if previously frozen.
  • Dice the onion and bell peppers. Mince the garlic. Drain and rinse the black beans.
  • Heat a large skillet suitable for stovetop cooking over medium heat.

Cooking

  • Add the ground beef to the skillet. Cook, stirring occasionally, until browned, about 5-7 minutes.
  • Add the diced onion and bell peppers to the skillet. Sauté for another 5 minutes until the onions are translucent.
  • Stir in the minced garlic, black beans, enchilada sauce, and corn. Mix thoroughly and let simmer for about 5 minutes.
  • Top with shredded cheese, cover the skillet, and let it melt for approximately 4 minutes until bubbly.

Serving

  • Remove the skillet from heat and let cool for a couple of minutes.
  • Scoop the enchilada mixture onto plates or into bowls. Use tortilla chips for dipping or tortillas for wrapping.
  • Garnish with your favorite toppings like cilantro or green onion if desired.

Notes

For best results, use lean ground beef to reduce fat. Prepare veggies in advance for quick assembly. Be cautious not to overcook the beef for better texture.
