Main ingredients

  • 1.5 pounds chicken thighs chosen for their juicy texture and flavor
  • 1/4 cup fresh parsley, chopped for garnish

Preparation

  • In a medium bowl, whisk together minced garlic, lemon juice, olive oil, oregano, salt, thyme, and ground pepper to create your marinade.
  • Add the chicken thighs to the bowl and ensure each piece is thoroughly coated. Cover with plastic wrap and refrigerate for at least 30 minutes, preferably 2-3 hours.
  • Preheat your grill to medium-high heat (around 375°F or 190°C) for an ideal cooking environment.

Cooking

  • Once your grill is preheated, remove the chicken thighs from the marinade, allowing excess marinade to drip off.
  • Place the chicken thighs directly on the grill grates. Grill each side for about 6-7 minutes, until grill marks form and the internal temperature reaches 165°F (74°C).
  • Once cooked, remove from the grill and let them rest for 5 minutes to help retain the juices.

Serving

  • Transfer the grilled chicken thighs to a serving platter. Squeeze additional lemon juice over the top.
  • Garnish with freshly chopped parsley and serve warm with your favorite sides.

Notes

Marinate for longer (up to 12 hours) for maximum flavor absorption. Use a meat thermometer for perfect doneness. Allow the chicken to rest before cutting to keep it juicy.
