Preparation

  • Preheat the grill. Heat your grill to medium-high (around 375°F to 450°F).
  • Brush the zucchini halves with olive oil and season with salt and pepper.
  • Place the zucchini on the grill and cook for about 7-10 minutes until charred and just beginning to soften.
  • Remove the zucchini from the grill and set aside to cool to room temperature.
  • Once cooled, chop the grilled zucchini into bite-sized pieces.
  • In a large bowl, mix together the chopped zucchini, grape tomatoes, chickpeas, remaining olive oil, and balsamic vinegar.
  • Gently toss the salad to blend all ingredients evenly.
  • Fold in the chopped basil and crumbled goat cheese, then season with salt and black pepper to taste.
