For the topping

Preparation

  • Pierce the steak with a fork all over to allow for better seasoning absorption.
  • Generously sprinkle the steak with kosher salt, black pepper, and garlic powder and set aside for about 10 minutes at room temperature.
  • In a large bowl, combine chopped red onions, olive oil, balsamic vinegar, salt, and pepper.
  • Allow the onion mixture to sit for a few minutes, so the flavors develop and the onions soften slightly.
  • Combine the mellowed onion mixture with the chopped tomatoes and fresh herbs, adjusting salt to taste.

Cooking

  • Preheat your grill or broiler to high heat, around 450°F (232°C).
  • Cook the steak for about 7 minutes on each side until medium rare, or longer to achieve your desired doneness.
  • Remove the steak from the grill and let it rest for about 5 minutes before slicing to retain juices.

Notes
