Ingredients
  

Vegetables

Bread

  • 4 pieces Ciabatta buns Their crusty exterior and soft interior make them perfect for holding the sandwich fillings.

Cheese and Condiments

  • 8 ounces Fresh mozzarella Contributes a creamy texture that melts beautifully when grilled.
  • ½ tablespoon Pesto Adds a rich, herbaceous note that enhances the overall flavor profile of the sandwich.
  • 2 tablespoons Aged balsamic vinegar OR balsamic glaze Adds a tangy richness that balances the sweetness of the peppers.
  • to taste Sea salt & freshly cracked pepper Enhances all the flavors while adding a touch of seasoning.
  • 2 tablespoons Olive oil Helps enhance flavors and aids in achieving a delightful grill on the peppers and buns.

Instructions
 

Preparation

  • Preheat the grill. Set it over medium to medium-high heat until hot.
  • Wash and slice the bell peppers in half, removing stems, seeds, and pith. Brush with olive oil and set aside.
  • Brush the outside of the ciabatta buns with olive oil. Cut them in half lengthwise and spread ½-1 tbsp of pesto on the cut sides.
  • Place a few slices of fresh mozzarella on the bottom half of each bun, then set aside.

Cooking

  • Place the bell peppers cut side down on the grill. Cook with the lid closed for 4-5 minutes.
  • Flip the peppers to the other side and continue grilling for another 4 minutes until charred but still al dente.
  • Remove the peppers to a foil-lined pan or plate, sprinkling with a little sea salt and black pepper.
  • During the last 2 minutes of pepper cooking, place the ciabatta buns cut sides up on a grill rack away from direct heat until toasted and the mozzarella melts.

Serving

  • Assemble the sandwiches by placing two halves of grilled bell pepper on the bottom half of the ciabatta bun with melted mozzarella.
  • Drizzle aged balsamic vinegar or balsamic glaze over the peppers, then place the top half of the ciabatta bun on top.
  • Cut in half and savor the incredible flavors of your freshly made sandwich!

Notes

Ensure your grill is preheated adequately for the best charring on the peppers. Experiment with different types of fresh herbs for added freshness.
