Preparation

  • Wash the zucchinis under cool water and pat them dry.
  • Cut them into long, thin slices (about 1/4 inch thick) to help them cook evenly.
  • In a bowl, toss the zucchini slices with olive oil, garlic powder, salt, and pepper until coated.
  • Preheat the grill: If using a charcoal grill, light it up; for gas, turn it on and preheat for about 10 minutes.

Cooking

  • Place the zucchini slices on the grill over medium heat. Grill for about 3-4 minutes on each side until you see grill marks.
  • Sprinkle the grated Parmesan cheese on top and close the grill lid for 1-2 minutes until the cheese melts.
  • Check for doneness; zucchinis should be tender but still have a bit of bite.
