Preparation

  • Juice the lemons into a large bowl, ensuring to catch any seeds.
  • Add the olive oil, minced garlic, dried oregano, salt, and pepper to the bowl. Whisk until well combined.
  • Place the chicken breasts into the marinade, ensuring they are evenly coated. Allow them to marinate for at least 15 minutes.
  • While the chicken marinates, preheat your grill to medium-high heat (about 400°F or 204°C).

Cooking

  • Remove the chicken from the marinade, letting the excess drip off.
  • Place the chicken on the grill and cook for 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C).
  • Check for grill marks and a slight char for perfectly grilled chicken.
  • Remove the chicken from the grill and let it rest for about 5 minutes before slicing.

Serving

  • Slice the grilled chicken into bite-sized pieces or serve whole.
  • Drizzle with remaining marinade (that hasn’t touched raw chicken) for added flavor.
