  • 1/4 cup fresh lemon juice Introduces brightness and acidity.
  • 3 cloves garlic, crushed Adds robust flavor.
  • 2 tablespoons fresh rosemary leaves, chopped Contributes earthy aroma.

For the Lamb

  • 4 pieces lamb loin chops Tender cuts perfect for grilling.
  • 1 teaspoon kosher salt Essential for enhancing flavors.
  • 1/2 teaspoon fresh ground pepper Adds hint of spice.

Instructions

Preparation

  • In a small bowl, combine extra-virgin olive oil, fresh lemon juice, crushed garlic cloves, and chopped fresh rosemary leaves to prepare the marinade.
  • Generously sprinkle kosher salt and fresh ground pepper over the lamb loin chops.
  • Coat the seasoned lamb with the marinade, ensuring all sides are covered. Allow it to rest for at least 1 hour, preferably overnight.

Cooking

  • Remove the lamb from the marinade before grilling, discarding the excess marinade.
  • Preheat your grill to medium-high heat (about 400°F or 200°C) and grill the lamb for about 5 minutes on each side, until it reaches desired doneness.
  • Alternatively, broil the marinated lamb for a similar cooking time, monitoring closely.

Notes

To enhance flavor, consider marinating overnight. Allow cuts to reach room temperature before cooking for even doneness. Garnish with fresh rosemary or lemon slices for presentation.
