For the Salsa

Instructions
 

Preparation

  • Preheat the grill to 400°F for optimal cooking.
  • If thick, butterfly the chicken breasts and gently pound to about 1/4 inch thick.
  • In a Ziploc bag, combine olive oil, lime juice, lime zest, garlic, cilantro, salt, and pepper. Massage the bag to ensure the chicken is fully coated, then let it marinate for 20-25 minutes.

Salsa Preparation

  • Dice grilled pineapple, shallots, jalapeno, and red bell pepper. If using fresh corn, remove the kernels.
  • Mix all salsa ingredients in a bowl with lime juice and a pinch of salt, then set aside.

Cooking

  • Lay down a sheet of foil on the heated grill.
  • Place the marinated chicken on the foil, cooking it for about 3 minutes on each side until fully cooked through and no longer pink inside.

Serving

  • Remove the chicken from the grill, arrange it on a platter, and generously top it with the pineapple jalapeno salsa. Serve immediately with lime wedges.

Notes

For the best results, marinate the chicken for at least 2 hours or overnight. Make sure to monitor cooking time closely to avoid overcooking. Grilling pineapple and corn beforehand enhances their natural sweetness and flavor.
