Instructions
 

Preparation

  • In a large bowl, combine the ground chicken with grated onion, minced garlic, chopped parsley, and spices (cumin, coriander, paprika, salt, and pepper).
  • Mix everything well until fully combined; use your hands for the best texture.
  • Form the mixture into elongated shapes and thread them onto the soaked wooden skewers. Aim for about four to five skewers, ensuring they are not too tightly packed for even cooking.
  • Brush the skewers lightly with olive oil to help them crisp up on the grill.
  • Let them rest for a few minutes while you preheat the grill to medium-high (around 375°F or 190°C).

Cooking

  • Place the skewers on the preheated grill, cooking for about 6-7 minutes on each side.
  • Use tongs to carefully turn the skewers halfway through; look for a golden-brown color and internal temperature reaching 165°F (75°C).
  • If grilling outdoors, baste the skewers with olive oil to retain moisture. Alternatively, if using an indoor grill or stovetop, use a grill pan for those lovely grill marks.
  • Once fully cooked, remove the skewers from the grill and let them rest for about 5 minutes.

Serving

  • Transfer the grilled chicken kafta to a serving platter.
  • Serve warm with a side of fresh vegetables or a garlic yogurt dip for added creaminess.
  • Garnish with additional parsley if desired and enjoy your flavorful meal!

Notes

Chill the mixture before grilling for better texture. You can adapt the recipe with various proteins and seasonings to suit your taste. Store any leftovers in an airtight container in the fridge for up to 3 days.
