Preparation

  • Gather your ingredients and a mixing bowl.
  • In the bowl, combine olive oil, fresh lemon juice, minced garlic, dried oregano, chili powder, salt, and pepper. Mix well until emulsified.
  • Place the chicken breasts in a shallow dish or resealable bag and pour the marinade over them.
  • Seal the dish or bag, ensuring the chicken is evenly coated.
  • Marinate the chicken in the refrigerator for at least 30 minutes (up to 2 hours for more flavor).

Cooking

  • Preheat your grill to medium-high heat, around 400°F (200°C).
  • Once heated, remove the chicken from the marinade, letting excess marinade drip off.
  • Place the chicken breasts on the grill, close the lid, and cook for about 6-7 minutes.
  • Flip the chicken breasts and grill for an additional 6-7 minutes or until the internal temperature reaches 165°F (75°C).
  • Crisp, charred grill marks should be visible, indicating perfect doneness.

Serving

  • Once cooked, remove the chicken from the grill and let it rest for 5 minutes to retain its juices.
  • Slice the chicken against the grain for maximum tenderness.
  • Serve the juicy grilled chicken breast with your favorite sides, such as steamed vegetables or a fresh salad.

Notes
