Preparation

  • Preheat one side of the grill for direct cooking at medium-high heat (450 degrees F) and one side for low, indirect heat. Brush the cooking grates clean for perfect grill marks.
  • Drizzle the chicken breasts with extra virgin olive oil and rub it over the meat. Season generously with kosher salt and freshly ground black pepper to enhance flavor.

Cooking

  • Place the chicken breasts on the hot grill. Cover and cook for 4-5 minutes or until they easily release from the grates, allowing for beautiful grill marks.
  • Carefully flip the chicken breasts and cook for another 4-5 minutes to ensure even cooking.
  • Once flipped, move the chicken to the indirect heat section of the grill and cook for an additional 5-8 minutes until firm to the touch and opaque throughout.
  • Halfway through cooking, place the lemon halves on the grill cut-side down and grill for 3-5 minutes. This caramelization adds a wonderful depth of flavor.
  • Transfer the chicken to a plate; cover it with aluminum foil and let it rest for 5 minutes. This step is crucial for juicy results.
  • Squeeze the grilled lemon over the chicken for an extra punch of flavor just before serving.
