Preparation

  • In a small bowl, combine olive oil, white balsamic vinegar, salt, and fresh cracked pepper, then whisk together until emulsified.
  • In a separate bowl, gently toss together diced avocado, diced mango, sliced grilled chicken, and diced red onion until well mixed.
  • Fill a large salad platter with baby red butter lettuce or divide it into four small dishes for individual servings.
  • Top the lettuce with the chicken, avocado, mango, and onion mixture.
  • Drizzle half of the vinaigrette over the top and mix gently to combine.
  • Present the salad immediately, offering the remaining dressing on the side if desired.

Notes

Use freshly grilled chicken for enhanced flavor. Toss avocado with a squeeze of lime juice to prevent browning. If making ahead, keep the dressing separate until serving.
