Preparation

  • Preheat the grill over medium to medium-high heat for 5-10 minutes until hot.
  • Slice the peppers in half and remove the stems, seeds, and pith. Brush both sides with olive oil.

Cooking

  • Grill the peppers cut side down on medium heat with the lid closed for 4-5 minutes, undisturbed.
  • Flip the peppers and grill with the lid closed for an additional 4-5 minutes.

Serving

  • Transfer to a pan or plate and sprinkle both sides with sea salt and freshly ground black pepper. Serve drizzled with aged balsamic or chimichurri if desired.

Notes

Grilled bell peppers can be served as a side, in salads, or stuffed for a delicious main dish. To avoid burning, monitor the grilling time closely.
