  • 1/4 cup fresh lemon juice Brightens the marinade and enhances flavor complexity.
  • 1 tbsp lemon zest Adds a concentrated citrus flavor for a more vibrant taste.
  • 4 cloves garlic Provides aromatic depth and savory nuance in each bite.
  • 1 tsp paprika Contributes a mild warmth and vibrant color.
  • 1 tsp cumin Offers a warm, earthy flavor that complements the chicken beautifully.
  • 1 tsp onion powder Adds a subtle sweetness and depth to the marinade.
  • 1 tsp salt Enhances the overall flavors by balancing the dish.
  • 1/2 tsp black pepper Introduces a hint of spice for an extra kick.
  • 2 tbsp freshly chopped cilantro or parsley Adds freshness and a pop of color for garnish.

For the chicken

  • 4 pieces skinless chicken breasts A lean protein source that stays juicy when marinated.

Instructions

Phase 1 – Prep

  • Make the marinade. In a mixing bowl, whisk together the yogurt, lemon juice, lemon zest, garlic, paprika, cumin, onion powder, salt, pepper, and cilantro.
  • Prepare the chicken. Pat the chicken breasts dry with a paper towel to remove excess moisture.
  • Marinate the chicken. Place the chicken in a gallon-size resealable bag and pour the yogurt marinade over the chicken. Seal the bag while pressing out any excess air.
  • Coat the chicken. Rub the chicken breasts with the yogurt marinade to coat them well. Let the chicken marinate for at least 45 minutes or up to 24 hours.

Phase 2 – Cook

  • Prepare the grill. Preheat the grill to 425°F (medium-high heat). Clean your grill grates and lightly grease them.
  • Grill the chicken. Grill the chicken for about 5 to 7 minutes per side until cooked through, and the thickest part of the chicken has reached 165°F.

Phase 3 – Serve

  • Rest and serve. Transfer the chicken to a plate or cutting board and allow it to rest for 5 minutes before slicing or serving. Enjoy!

Notes

For best results, consider these pro tips: Always pat the chicken dry before marinating, marinate overnight for deeper flavor, ensure thorough cooking, and rest before slicing.
