Ingredients
  

Crust

  • 1.5 cups Graham cracker crumbs Forms the delicious crust.

Filling

Instructions
 

Preparation

  • Preheat your oven to 325°F (163°C).
  • Grease a 9-inch springform pan lightly.
  • In a mixing bowl, combine graham cracker crumbs, granulated sugar, melted butter, and a pinch of salt. Stir until well combined.
  • Press the mixture firmly into the bottom of the springform pan to create an even crust.
  • Place the crust in the freezer for 10-15 minutes to set.

Cook/Assemble

  • In a large mixing bowl, beat the softened cream cheese until smooth and creamy.
  • Add in the Greek yogurt and continue to beat until well combined.
  • Incorporate the eggs one at a time, mixing well after each addition.
  • Add the granulated sugar, flour, vanilla extract, and lemon zest. Mix until smooth.
  • Pour the filling into the chilled crust and smooth the top with a spatula.
  • Bake in the preheated oven for 50-60 minutes until the edges are set and the middle has a slight jiggle.

Serve

  • Remove the cheesecake from the oven and let it cool in the pan for at least 30 minutes.
  • Transfer to the refrigerator and chill for at least 4 hours, preferably overnight.
  • Once chilled, run a knife around the edge of the pan before removing the springform sides.
  • Slice and serve chilled, with your favorite toppings, if desired.

Notes

Use room temperature ingredients for a smoother batter. Consider placing a baking dish filled with water in the oven to create steam and prevent cracking.
