Instructions

Preparation

  • Take the lamb meat out of the fridge 20-30 minutes before grilling to come to room temperature.
  • Chop the fresh herbs and combine with paprika, cayenne, cumin, raisins, and garlic. Add to the bowl with the lamb and gently mix into the meat with your hands, being careful not to overwork.
  • Preheat your grill to medium high for 5-10 minutes.
  • Divide the meat mixture into 6 equal portions and form into round patties, pressing a slight indent in the middle of each.

Cooking

  • Generously sprinkle both sides of the patties with salt and pepper.
  • Place the patties on the hot grill and close the lid, cooking for 5 minutes.
  • Flip the burgers and continue grilling, lid closed, for an additional 5 minutes for medium/medium rare.
  • For added flavor, top your burgers with feta cheese to melt during the last 1-2 minutes.
  • Remove the burgers from the grill and transfer to a foil-lined baking sheet. Loosely cover with foil and let rest for 5 minutes.

Serving

  • Assemble the burger by placing it on the bottom brioche bun, topping with arugula, sliced red onion, feta cheese, and a dollop of tzatziki before adding the top bun.

Notes

Allow to rest after grilling to keep the burgers juicy. Experiment with fresh herbs based on availability.
