Ingredients

  • 2 large Eggs Provides structure and richness.
  • 1 tsp Vanilla extract Adds depth and warmth to the filling.
  • 1/2 cup Finely chopped pistachios Brings crunch and nutty flavor.

For serving

  • 1 tbsp Honey for drizzling An inviting finishing touch.
  • 2 tbsp Chopped pistachios for garnish Adds color and texture.

Instructions
 

Preparation

  • Preheat your oven to 325°F (160°C).
  • Line an 8x8 inch baking pan with parchment paper, allowing some overhang for easy removal.
  • In a mixing bowl, combine graham cracker crumbs, melted butter, and sugar until fully incorporated.
  • Press the mixture into the bottom of the prepared pan to form a firm crust.
  • Place the crust in the refrigerator to chill and set while you prepare the filling.

Cooking/Assembling

  • In a large bowl, beat the softened cream cheese until smooth and creamy.
  • Add the Greek yogurt, honey, eggs, and vanilla extract, mixing until just combined.
  • Gently fold in the chopped pistachios until evenly distributed through the mixture.
  • Pour the cheesecake filling over the chilled crust, spreading it evenly.
  • Bake in the preheated oven for 30-35 minutes, or until the edges are set and the center is slightly wobbly.

Serving

  • Remove the cheesecake bars from the oven and allow to cool at room temperature for 30 minutes.
  • Chill in the refrigerator for at least 2 hours or until fully set.
  • Once chilled, lift the bars out of the pan using the parchment overhang.
  • Cut into squares and drizzle with honey; sprinkle with extra pistachios for garnish.
  • Serve chilled for a refreshing dessert that will impress your family!

Notes

Use room temperature cream cheese for a smoother filling. For a crunchier base, lightly toast the graham cracker crumbs. Store leftovers in an airtight container in the fridge for up to 5 days.
