  • 3 medium Tomatoes, diced Heirloom tomatoes are ideal.
  • 1 cup Feta Cheese, crumbled Can substitute with goat cheese.
  • 1/2 medium Red Onion, finely chopped Soak in water to mellow taste.

Dressing

  • 1/4 cup Olive Oil Use extra virgin for best quality.
  • 2 tablespoons Red Wine Vinegar Balsamic vinegar can be substituted.
  • 1 teaspoon Dried Oregano Fresh is a great option if available.
  • to taste Salt and Pepper Always adjust according to preference.

Preparation

  • Wash and dry your cucumbers and tomatoes.
  • Dice the cucumbers and tomatoes into bite-sized pieces.
  • Finely chop the red onion, ensuring it’s small enough to mix well.

Cooking / Assembling

  • In a large bowl, combine the diced cucumbers, tomatoes, feta cheese, and red onion.
  • In a separate bowl, whisk together olive oil, red wine vinegar, dried oregano, salt, and pepper.
  • Pour the dressing over the salad and toss gently to coat everything evenly.

Serving

  • Serve immediately for the freshest flavor or let it chill for 30 minutes to enhance the taste.
  • Enjoy it alongside grilled chicken or as a refreshing snack on its own!

Notes

For best results, let the salad sit for at least 30 minutes before serving to meld the flavors. Store leftovers in an airtight container for up to 2 days in the fridge. Serve with a lemon wedge or additional fresh herbs if desired.
