  • 2 medium sugar pumpkins Provides natural sweetness and rich flavor for the soup.

  • 2 cloves garlic Infuses the soup with aromatic warmth and complexity.
  • 4 cups chicken or vegetable broth Creates a flavorful base that enhances the overall taste.
  • 1 can coconut milk Introduces a creamy richness and a hint of sweetness.
  • 2 tablespoons pure maple syrup or raw honey Adds natural sweetness.
  • 1 teaspoon sea salt Enhances the flavors of the ingredients.
  • 1/2 teaspoon black pepper Adds a hint of heat.
  • 1/2 teaspoon cinnamon Brings warmth and sweetness.
  • 1/4 teaspoon nutmeg Provides a comforting spice note.

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • Cut the tops off the pumpkins and then cut them in half.
  • Scrape out all of the seeds and guts.
  • Brush the pumpkin flesh lightly with avocado oil or olive oil, and set face down on the prepared sheet pan. Roast for 45 minutes.
  • Remove from the oven, let cool for a few minutes, then peel off the skin. Set aside.

Cooking

  • In a large saucepan over medium heat, add avocado oil or olive oil, onion, celery, and garlic. Cook for 2-3 minutes, or until slightly browned and translucent.
  • Add remaining ingredients while stirring, including the roasted pumpkin, and bring to a nice simmer.
  • Transfer the soup mixture to a blender or use an immersion stick blender to puree the soup. Pour the mixture back into the pot.
  • Continue cooking over medium-low heat for about 10 minutes.

Serving

  • Garnish with roasted pumpkin seeds, and/or a dollop of plain Greek yogurt or coconut milk.

Notes

For the best flavor, roast the pumpkins until they are caramelized. Adjust the sweetness with more maple syrup or honey to taste. Don't blend for too long; keep some texture.
