For the filling

  • 1/4 cup powdered sugar Sweetens the cream cheese filling.
  • 1 teaspoon vanilla extract Adds a warm flavor note to the filling.
  • 2 tbsp butter Used at room temperature for smooth filling consistency.

Instructions
 

Preparation

  • Preheat the oven to 350°F and line a jelly roll pan with parchment paper.
  • In a bowl, whisk together eggs, sugar, and melted butter until blended.
  • In another bowl, whisk gluten-free flour, cocoa powder, baking powder, baking soda, salt, and espresso powder.
  • Gradually mix dry ingredients into wet ingredients until just combined.
  • Transfer the batter into the prepared pan and level it out.
  • Bake for 10-11 minutes until the cake springs back when touched.
  • Cover the baked cake with foil to keep it moist while cooling.

Rolling and Filling

  • Once cool, gently roll the cake from the short end while still warm and wrap it in foil.
  • In a separate bowl, whip together cream cheese, cocoa powder, powdered sugar, vanilla extract, and room temperature butter until smooth.
  • After the cake cools, unroll it and spread the cream cheese mixture evenly.
  • Re-roll the cake and wrap tightly in plastic wrap; refrigerate overnight.

Serving

  • Before serving, dust with powdered sugar and cocoa powder, then slice and enjoy!
