For the Cream Cheese Filling

Instructions
 

Preparation

  • Combine all the eggs, almond butter, blackstrap molasses, vanilla extract, and coconut sugar in a mixing bowl.
  • Mix in the coconut flour, baking soda, and gingerbread spices and combine well. Sift the dry ingredients if they’re clumpy.
  • Cover the dough and freeze for 20 minutes to firm up.

Baking

  • Preheat the oven to 350°F (175°C).
  • Use a spoon to scoop the dough into balls, and press down gently with your palm.
  • Place on a baking sheet and bake for 13-14 minutes until lightly golden.

Filling and Assembly

  • Mix the cream cheese, butter, powdered sugar, and vanilla until smooth.
  • Once the cookies have cooled, spread the filling on one cookie and top it off with another cookie.

Notes

The cookies can be baked ahead of time and assembled when ready to serve for a fresher experience. Use room temperature ingredients for a smoother batter.
