  • Flatten the chicken breasts to an even thickness using a meat mallet.

Cooking

  • Heat butter in a skillet over medium heat until melted and bubbling.
  • Coat each chicken breast in flour, dip into the eggs, and then press into the breadcrumbs.
  • Carefully place the breaded chicken into the skillet, cooking for about 4-5 minutes on each side until golden brown and cooked through.
  • Ensure the internal temperature reaches 165°F (74°C).

Serving

  • In the same skillet, reduce heat and add more butter, lemon juice, and capers, stirring to combine and heat through.
