Preparation

  • Begin by cleaning the rack of lamb, trimming any excess fat while leaving some for flavor.
  • In a small bowl, combine minced garlic, finely chopped rosemary, olive oil, kosher salt, and ground black pepper to create a marinade.
  • Rub the marinade all over the lamb, ensuring it’s evenly coated. Allow it to sit for at least 30 minutes at room temperature for the flavors to meld.

Cooking

  • Preheat your grill to medium-high heat (around 400°F or 200°C).
  • Once heated, place the marinated rack of lamb on the grill bone-side down.
  • Close the lid and grill for about 15–20 minutes, flipping halfway. Look for a nice char and an internal temperature of 145°F (63°C) for medium-rare.

Serving

  • After grilling, remove the lamb from the grill and let it rest for 5–10 minutes; this helps retain its juices.
  • Slice the lamb chops between the bones and arrange them on a serving platter.
  • Consider garnishing with a sprinkle of fresh rosemary or a drizzle of olive oil before serving. Enjoy them warm!

Notes

For extra flavor, marinate the lamb chops for a few hours or overnight in the fridge. If you're running short on time, use an air fryer for a quicker cook — just check your timing based on thickness. Always allow the lamb to come to room temperature before grilling and avoid overcooking for the best results.
