Instructions
 

Preparation

  • Preheat your oven to 450°F (232°C).
  • Take your 3 pounds of roast beef from the refrigerator and let it come to room temperature for about 30 minutes.
  • Finely chop the fresh rosemary and thyme.
  • In a small bowl, mix the olive oil, herbs, minced garlic, salt, and pepper.
  • Rub this mixture all over the roast, ensuring every crevice is coated.

Cooking

  • Place the prepared roast on a rack in a roasting pan.
  • Insert it into the preheated oven and roast for 20 minutes to create a nice crust.
  • Reduce the oven temperature to 325°F (163°C) and continue cooking for another 1 hour 15 minutes or until it reaches your desired doneness.
  • For medium-rare, aim for an internal temperature of 135°F (57°C), or 145°F (63°C) for medium.
  • Once cooked, remove the roast from the oven and let it rest for at least 15 minutes before slicing.

Serving

  • Using a sharp knife, slice the roast against the grain into even pieces.
  • Serve immediately with your choice of sides, or store for meal prepping throughout the week.
  • Pair with a green vegetable for a balanced meal and drizzle with pan juices for added flavor.

Notes

For best flavor, allow the meat to marinate in the herb mixture for a few hours or overnight. Store leftovers in airtight containers to maintain freshness.
