Preparation

  • Wash and spiralize the zucchini to create noodles.
  • Dice the chicken into bite-sized pieces.
  • Mince the garlic and ginger finely.
  • Chop green onions and set aside for garnish.

Cooking

  • Heat olive oil in a large skillet over medium-high heat.
  • Add the diced chicken and cook until browned and fully cooked, about 5-7 minutes.
  • Stir in the minced garlic and ginger, cooking for 1-2 minutes until fragrant.
  • Add zucchini noodles and soy sauce, tossing to combine for 2-3 minutes until the noodles are warmed through.
  • Season with red pepper flakes to taste, stirring well.
