Preparation

  • Preheat your oven to 400°F (200°C).
  • Rinse and halve the baby potatoes, placing them in a bowl.
  • Season the potatoes with salt, pepper, and half the thyme, mixing well to coat.
  • Season both sides of the chicken breasts with salt and pepper.
  • Prepare minced garlic and measure out the butter.

Cooking

  • In a large oven-safe skillet, melt the butter over medium heat.
  • Add garlic and sauté for about 1-2 minutes until fragrant.
  • Add the seasoned chicken breasts to the skillet, searing for 5 minutes on each side until golden brown.
  • Remove the chicken and set it aside. Toss the halved potatoes into the skillet, coating them in the garlic butter mixture.
  • Place the chicken back on top of the potatoes, sprinkle with the remaining thyme, and transfer the skillet to the oven.
  • Bake for 25-30 minutes or until the chicken is cooked through and the potatoes are tender.

Serving

  • Once everything is cooked, remove the skillet from the oven, and let it rest for a few minutes.
  • Garnish with freshly chopped parsley for a vibrant look.
