Ingredients
  

Granola Base

  • 2 cups old fashioned rolled oats Adds heartiness and fiber.
  • 1/2 cup nut butter Provides healthy fats.
  • 1/4 cup maple syrup or honey Natural sweetener.
  • 1 teaspoon pure vanilla extract Enhances flavor.
  • 1/2 teaspoon cinnamon Provides warmth and spice.
  • 1/4 teaspoon salt Balances sweetness.

Toppings

  • 2 cups vanilla yogurt or skyr Provides creaminess.
  • 1 cup fresh strawberries Adds sweetness and juiciness.
  • 1 cup fresh blueberries Contains antioxidants.
  • 1 cup fresh raspberries and/or blackberries Adds tartness and color.

Instructions
 

Preparation

  • Prepare the baking dish by lining an 8x8” or 9x9” dish with parchment paper.

Making the Granola Base

  • In a large mixing bowl, combine all the granola ingredients and mix with a spatula.
  • Transfer the granola mixture to the lined baking dish, pressing firmly and spreading it into an even layer.

Assembling the Bars

  • Spread the vanilla yogurt or skyr evenly over the granola base.
  • Top with strawberries, blueberries, raspberries, and/or blackberries.

Freezing and Serving

  • Freeze the mixture for at least 2 hours or until solid.
  • Remove from the freezer, cut into squares, and enjoy. Store any leftovers in the freezer.

Notes

For best texture, allow the bars to sit at room temperature for a few minutes before serving. Packed tightly, these bars will hold together when cut.
