  • 1 tablespoon sesame oil Adds a nutty flavor; a little goes a long way.

Preparation

  • Gather and prepare your ingredients: chop the onion, mince the garlic, and if you’re using fresh veggies, dice them up.
  • If you’re using leftover rice, break up any clumps so everything mixes evenly.

Cooking

  • Heat the vegetable oil in a large skillet over medium heat until shimmering.
  • Add the onion and sauté until it becomes soft and translucent, about 3 minutes.
  • Toss in the garlic and mixed veggies, cooking for another 2-3 minutes until heated through.
  • Push veggies to the side of the skillet and pour in the beaten eggs. Scramble until fully cooked.
  • Stir in the cooked rice, soy sauce, and sesame oil, mixing everything thoroughly. Season with salt and pepper to taste.

Serving

  • Once everything is heated through, taste and adjust seasoning if needed.
  • Remove from heat and garnish with sliced green onions.
  • Serve warm and enjoy the delightful surprise in every bite!

Notes

For the best results, use cold, day-old rice to prevent mushiness, and don’t skimp on the seasonings! This dish is easily adjustable according to dietary preferences.
