Instructions
 

Preparation

  • Wash the ripe tomatoes under cool water. Pat them dry, then chop them into small dice.
  • Finely chop the red onion and mince the garlic cloves, letting the garlic sit for a couple of minutes to enhance flavor.
  • Chop the fresh basil into thin strips and set aside all your ingredients.

Cook/Assemble

  • In a mixing bowl, combine the diced tomatoes, chopped red onion, minced garlic, and fresh basil.
  • Drizzle in the balsamic vinegar and sprinkle with salt and pepper. Gently toss until well mixed.
  • Slice the baguette into even pieces, about 1-inch thick. Lightly toast for extra crunch if desired.

Serve

  • Place the toasted baguette slices on a serving platter.
  • Generously spoon the tomato mixture onto each slice, allowing some to overflow.
  • Finish with a drizzle of balsamic reduction over each bite and serve immediately.

Notes

Toast the bread for extra crunch, and keep the tomato mixture separate from the bread if prepping ahead to avoid sogginess.
