Preparation

  • Preheat your oven to 350°F (175°C).
  • Butter a large casserole dish generously to prevent sticking.
  • Cut the brioche loaf into cubes, ensuring they’re roughly uniform.
  • In a large bowl, whisk together eggs, milk, heavy cream, brown sugar, cinnamon, vanilla extract, and nutmeg until fully combined.
  • Layer the cubed brioche in the casserole dish and pour the custard mixture evenly over it. Press gently to ensure all bread is soaked.

Cooking

  • Cover the casserole dish with foil and let it sit for about 20–30 minutes, allowing flavors to meld and bread to soak.
  • Bake covered in the preheated oven for 30 minutes.
  • Remove the foil, then continue baking for an additional 15-20 minutes until the top is golden brown and a toothpick inserted into the center comes out clean.

Serving

  • Allow the casserole to cool for 5-10 minutes before serving; this helps firm up the custard.
  • Drizzle with whipped cream or a light dusting of powdered sugar, if desired.
  • Serve warm, garnished with fresh fruit or nuts for added texture and flavor.

Notes

For best results, use stale brioche, allow adequate soaking time, and store leftover casserole properly. Can be made gluten-free or dairy-free with substitutions.
