  • 1 lb fresh carrots Peeled and grated
  • 1 tbsp lemon zest From one large lemon
  • 1 tbsp lemon juice Freshly squeezed from the lemon
  • 1 tbsp dijon mustard
  • 1 tbsp honey Gently sweetens the dressing
  • 1 tsp kosher salt
  • 1/4 tsp black pepper Freshly ground
  • 1/4 cup olive oil For the dressing
  • 1/4 cup fresh parsley Finely chopped, for garnish

Instructions
 

Preparation

  • Peel and grate 1 pound of fresh carrots until finely grated.
  • Zest one large lemon, avoiding the bitter white pith.
  • Squeeze the juice from the same lemon into a measuring cup.
  • Finely chop the fresh parsley and set aside.

Mixing

  • In a large bowl, combine the grated carrots, lemon zest, and chopped parsley.
  • In a smaller bowl, whisk together the lemon juice, dijon mustard, honey, kosher salt, black pepper, and olive oil until emulsified.
  • Pour the dressing over the carrot mixture and toss until well coated.

Serving

  • Transfer the salad to a serving platter and arrange beautifully.
  • Top with additional parsley for garnish.
  • Serve immediately or chill for about 30 minutes to blend the flavors.

Notes

For extra crunch, add nuts like walnuts or almonds. Use freshly squeezed lemon juice for best flavor. Store leftovers in an airtight container for up to three days.
