  • 1 large egg
  • 1/2 cup Parmesan cheese or Mozzarella cheese (grated or shredded) Ideal for a rich flavor
  • 1 teaspoon Italian seasoning Feel free to adjust to personal taste
  • 1/8 teaspoon salt Optional if you're watching sodium
  • 1/4 teaspoon ground black pepper
  • Cooking spray Use a light coat for easy release

Instructions

Preparation

  • Preheat your oven to 375°F (190°C) and line a baking sheet with unbleached parchment paper.
  • Rinse the cauliflower head, strip away the outer leaves, and break it down into smaller florets.
  • Process in a food processor until it resembles rice texture.
  • Spread the riced cauliflower on the baking sheet and bake for 15 minutes or microwave in a safe bowl for about 8 minutes.
  • Once cooled, place it in a large bowl lined with cheesecloth and squeeze out the excess water until almost none remains.
  • Increase the oven temperature to 450°F (232°C).

Making the Dough

  • In a mixing bowl, combine the drained cauliflower, egg, cheese, Italian seasoning, salt, and pepper.
  • Mix well to combine.

Forming and Baking the Crust

  • Line your baking pan or pizza stone with fresh parchment paper.
  • Transfer the combination into the center and flatten it out into an 11-inch base, thickening the edges.
  • Bake the crust for about 20 minutes.
  • For a crispier crust, gently flip it over using a spatula and bake for a few more minutes.

Final Baking

  • Top the crust with your favorite toppings and return to the oven until the cheese is golden brown and bubbly.
  • Let it cool for a minute or two, cut into 8 slices, and serve.

Notes

Store leftover slices wrapped tightly in plastic wrap. Refrigerate for up to 3 days or freeze for longer storage.
