Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C).
  • Prepare four large sheets of heavy-duty aluminum foil.
  • On each sheet, layer sliced bell peppers, onions, and black beans as a colorful base.
  • Sprinkle the spices—chili powder, cumin, ground coriander, garlic powder, paprika, salt, and pepper—over the vegetable base.
  • Place one chicken breast on top of the vegetables on each foil sheet, pressing it gently into the mix.

Cooking

  • Drizzle a little olive oil over the chicken for added moisture.
  • Fold the sides of the foil tightly to create packets, sealing each well to trap the steam.
  • Place the foil packets on a baking sheet for easy handling.
  • Bake in the preheated oven for 25–30 minutes. The chicken should be cooked through and juices should run clear when tested.

Serving

  • Carefully remove the packets from the oven. Let them sit for 5 minutes before opening. Beware of steam!
  • Open the foil packets and check the chicken's doneness. It should be tender and juicy.
  • Squeeze fresh lime juice over the chicken and top with sliced jalapeños if desired.
  • Serve directly from the foil packets or plate them with your favorite side dishes.

Notes

Use heavy-duty foil to prevent tearing and leaks. For extra flavor, marinate the chicken overnight in spices and a splash of lime. Store unused packets in the fridge before cooking.
