Preparation

  • Wash the fresh spinach thoroughly and chop it finely.
  • Dice the onion and set it aside.
  • Grate the cheese of your choice.

Cooking

  • In a skillet, melt the butter over medium heat.
  • Add the diced onion and sauté until it’s translucent, about 2 minutes.
  • Add the spinach and cook until wilted, around 1-2 minutes.
  • In a bowl, whisk the eggs with salt and pepper until well combined.
  • Pour the egg mixture into the skillet over the spinach and onion.
  • Once the edges start to set, sprinkle the cheese over the top.
  • Cover with a lid and cook for an additional 3-4 minutes until fully set.

Serving

  • Carefully slide the omelette onto a plate.
  • Cut in half or quarters and serve immediately.
