Instructions
 

Preparation

  • Rinse the chicken drumsticks under cold water.
  • Chop the garlic finely to release its flavor.
  • In a bowl, combine the vinegar, soy sauce, brown sugar, garlic, peppercorns, and red pepper.
  • Place the chicken in a large bowl and pour the marinade over it. Let it sit for at least 30 minutes (or up to overnight in the refrigerator) to soak in those flavors.

Cooking

  • In a large pot or Dutch oven, heat a drizzle of oil over medium heat.
  • Remove the chicken from the marinade, reserving the liquid. Brown the chicken on all sides for about 5 minutes.
  • Pour the marinade back into the pot and toss in the bay leaves.
  • Bring it to a gentle boil, then reduce the heat. Cover and let it simmer for about 30–40 minutes until the chicken is tender and cooked through.

Serving

  • Uncover and let it simmer for an extra 5–10 minutes to reduce the sauce if you prefer a thicker consistency.
  • Serve your Chicken Adobo over beds of fluffy rice, topped with sliced green onions for a burst of freshness.
