Preparation

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a mixing bowl, combine flour, baking soda, and brown sugar, whisking until well blended.
  • In another bowl, mix melted coconut oil, honey, vanilla extract, and fig jam (or mashed figs) until smooth.
  • Slowly incorporate the wet ingredients into the dry ingredients, stirring until a dough forms.

Baking

  • Form small balls of cookie dough and place them on the prepared baking sheet, about 2 inches apart.
  • Flatten each cookie gently with a fork or your fingers.
  • Bake in the oven for 10-12 minutes until edges are golden brown and slightly underbaked in the center.
  • Let cool on the baking sheet for 5 minutes before transferring to a wire rack.
