Ingredients
  

For the Marinade

For the Avocado Salsa

  • 2 pieces Ripe avocados, diced Creamy texture and healthy fats.

  • 1/4 cup Fresh cilantro, chopped Brightens and adds a herbal touch.

Instructions
 

Preparation

  • In a medium bowl, combine fresh lime juice, olive oil, minced garlic, ground cumin, chili powder, salt, and black pepper to create the marinade.
  • Place the chicken breasts in a resealable plastic bag or a shallow dish, and pour the marinade over, ensuring the chicken is well coated.
  • Seal the bag or cover the dish, and refrigerate for at least 30 minutes or up to 4 hours for maximum flavor.
  • Prepare the avocado salsa by dicing avocados and tomato, finely chopping red onion, and cilantro.
  • In a bowl, combine the avocado, tomato, red onion, cilantro, lime juice, and salt. Mix gently, covering the bowl to keep it fresh.

Cooking

  • Preheat your grill or skillet over medium-high heat (around 400°F or 200°C).
  • Remove chicken from the marinade and allow excess to drip off. Discard the remaining marinade.
  • Cook the chicken for about 6-7 minutes per side, or until the internal temperature reaches 165°F (75°C) and the outside is slightly charred.
  • Once cooked, remove from heat and let the chicken rest for 5 minutes before slicing.

Serving

  • Slice the chicken into strips and place them on a serving platter.
  • Generously top the chicken with the prepared avocado salsa.
  • Garnish with additional cilantro if desired, and serve with lime wedges on the side.

Notes

For an extra layer of flavor, marinate the chicken overnight. Consider using a meat thermometer to avoid overcooking the chicken. Store leftover chicken and salsa separately to maintain freshness.
