Preparation

  • Line a 9x13-inch pan with parchment paper that sticks up above the sides for easy removal later.

Cooking

  • In a large saucepan, combine sugar, butter, and evaporated milk. Place over medium heat and stir with a spatula until the butter is melted.
  • Increase the heat slightly and bring the mixture to a boil, stirring constantly.
  • Continue cooking and stirring until the mixture reaches 234°F on a candy thermometer, about 4-5 minutes.
  • Remove from heat and stir in semi-sweet chocolate until melted and thoroughly combined.
  • Stir in marshmallow fluff, walnuts, and vanilla extract until the mixture is smooth and well combined.
  • Transfer the fudge mixture into the prepared pan, spreading it evenly.
  • Allow the fudge to set at room temperature for about 4 hours, or place it in the fridge for a quicker set.
  • Once firm, slice the fudge into squares and serve at room temperature.

Notes

For best results, use a candy thermometer for precision and avoid stirring too vigorously after adding the chocolate.
