Instructions
 

Preparation

  • Gather all the necessary ingredients for the sauce.
  • Preheat a medium sauce pot over medium heat and add oil.
  • Chop the onion and add it to the pot, cooking until softened and translucent.
  • Sprinkle flour over the onion and stir until evenly coated.

Cooking

  • Slowly pour in beef stock while continuously stirring to avoid lumps.
  • Incorporate the crushed tomatoes and all other remaining ingredients into the pot.
  • Stir well and bring the mixture to a gentle simmer, allowing it to cook for a few minutes.
  • Transfer the content into a food processor and blend until smooth and creamy.
  • Let the sauce cool before storing or serving.

Storing

  • Pour the cooled sauce into a glass jar and refrigerate for 5-7 days or freeze in zip-lock bags for 2-3 months.

Notes

For gluten-free adaptation, use gluten-free all-purpose flour and ensure the chipotles are gluten-free. Start with a hot oil for caramelized onions and adjust the consistency with beef stock if desired.
