Preparation

  • In a medium bowl, mash the avocado and combine it with lime juice, chives, kosher salt, and black pepper. Set aside.
  • Cut a circle in the center of each slice of bread to create a hole for the egg.

Cooking

  • In a skillet, heat unsalted butter over medium-low heat and toast the bread slices until golden brown on one side, about 3–4 minutes.
  • Flip the bread and crack an egg into each hole, seasoning with salt and pepper to taste.
  • Cover the skillet and cook until the eggs reach your desired doneness, approximately 3 to 6 minutes, depending on how runny you like your yolks.
  • Carefully remove the bread once the edges are golden brown and the egg is cooked to your preference.
  • Spread the avocado mixture generously over the cooked bread and serve immediately for the best taste and texture.

Notes

For perfect, runny yolks, crack the eggs into the holes gently to avoid breaking the yolks. Use a thicker slice of artisan bread for better support.
