Preparation

  • Wash and dry the zucchinis, then slice them thinly using a sharp knife or mandoline for even cooking.
  • In a large skillet, heat the olive oil over medium heat.
  • Add the zucchini and season with salt, pepper, and garlic powder. Sauté for about 5-7 minutes until slightly tender.
  • Remove the skillet from heat and let the zucchini cool slightly.

Cooking and Assembly

  • In a mixing bowl, combine the sautéed zucchini, shredded cheese, grated Parmesan cheese, and heavy cream or milk.
  • Sprinkle in the Italian seasoning, and mix until all the ingredients are well-coated.
  • Transfer the mixture to a greased baking dish, spreading evenly.
  • If using, sprinkle breadcrumbs on top for added crunch.
  • Bake in the preheated oven for about 25-30 minutes or until golden and bubbly, and the top is crispy.

Serving
