  • Gather all your ingredients for a smooth cooking process.
  • Julienne the carrots and slice the mushrooms while you grate the ginger and mince the garlic.
  • Slice the green onions, separating the white portions from the green tops.
  • If using protein like chicken or tofu, cube it into bite-sized pieces for even cooking.
  • Get your broth ready by placing it in a large pot over medium heat.

Cooking

  • Bring the broth to a gentle simmer over medium heat, around 190°F (88°C).
  • Add the white parts of the green onions, ginger, garlic, and sliced mushrooms to the pot.
  • Stir to combine and let simmer for about 5-7 minutes until mushrooms have softened.
  • Add the julienned carrots and your protein choice; cook for an additional 5 minutes.
  • Finally, stir in the udon noodles and cover the pot, allowing them to heat through for about 5 minutes.

Serving

  • Once the noodles are tender, taste the soup and add soy sauce to your preference.
  • Remove from heat and stir in spinach or bok choy until wilted.
  • Ladle the soup into bowls, garnishing with the green tops of the scallions.

Notes
