For the peaches

Preparation

  • Preheat your oven to 350°F (175°C).
  • Prepare an 8-inch square baking pan by greasing it lightly with butter.
  • Wash and slice the peaches, removing the pits, and set aside.
  • In a bowl, whisk together the sugar, melted butter, eggs, vanilla, and almond extract until well combined.
  • In another bowl, mix the flour, baking powder, and a pinch of salt.

Cooking

  • Gradually add the dry ingredients to the wet mixture, alternating with the milk, and mix until just combined.
  • Pour the batter into the prepared baking pan, smoothing it out evenly.
  • Distribute the sliced peaches on top of the batter, pressing them gently in.
  • Sprinkle cane sugar over the peaches for added sweetness and crunch.
  • Bake in the preheated oven for 30–35 minutes or until golden brown and a toothpick inserted in the center comes out clean.

Serving

  • Once baked, let the cake cool in the pan for about 10 minutes.
  • Carefully transfer it to a wire rack to cool completely before slicing.
  • Serve warm or at room temperature, perhaps with a dollop of Greek yogurt for added protein.

Notes

For a gluten-free version, use a 1:1 gluten-free flour blend. Store the cake in an airtight container to keep it moist. Using ripe peaches will enhance the sweetness and flavor of your cake.
